I spent a good part of the day yesterday baking. One of my favorite recipe to make for the kids and to give as gifts is a Toffee recipe I got from my husbands stepmother, Grandma Elsie. It's really simple to make and oh so yummy. Since I have really been enjoying all the wonderful recipes my blogging sisters have shared I thought I'd pass this one along to everyone.
Christmas Toffee
Saltine Crackers (salted ones)
2 sticks of butter (yep, real butter)
1 cup of sugar
1 bag of semi sweet chocolate chips
Heat oven to 350.
Line a cookie sheet with aluminum foil. Spray with pam or grease with butter (I like to take the stick of butter and butter the foil with it). Layer the saltine crackers on top of the foil in one layer.
Bring the one cup of sugar and 2 sticks of butter to a boil. (Stirring constantly.) Boil for 2 minutes (I lower the heat and continue to stir, or else it will burn.) It will be a very light golden color.
Pour the sugar mixture on top of the crackers (spread with a wooden spoon to cover every saltine.)
Bake in oven for about 10 minutes. Until the crackers turn a caramel color.(Now when I had an electric oven it took about 10 min. with my gas stove it takes about 8.) This is the tricky part because the crackers can burn if not watched closely. I would set the pan in the center of oven. Not to close to the heat source.
Take out of oven. Spread chocolate chips over top of crackers. (I like to place crackers back in oven for a few seconds, on top rack, to help melt the chips faster.) Spread chocolate with a spoon over all of the crackers.
Place pan in refrigerator till set. Take out and break into small pieces.
Variation: You can add chopped nuts on top of the chocolate before it cools.
